- It’s high in protein. Shredded chicken breast and thigh meat make it easy to hit 20 to 30 grams of protein per meal.
- It’s adaptable. Whether you’re feeding a family, cooking for one or following a specific diet, you can season it however you like.
How to shred a rotisserie chicken
Rotisserie chicken meal prep starts with shredding. First, let the chicken cool enough to handle, then pull off and discard the skin if you want to lower the fat. Next, pull the meat from the bones with your fingers or two forks. A typical bird gives you enough meat for both recipes below, often with a little left over. Store shredded chicken in an airtight container in the fridge and use it within 3 to 4 days.
Rotisserie chicken meal prep recipe 1: Curry chicken salad
To begin, this curry chicken salad brings a burst of flavor to your meal prep routine. Aromatic curry, fresh lemon and crunchy cashews prove that budget-friendly doesn’t mean bland.
Ingredients (4 servings):
- 2 cups shredded chicken
- 1/2 cup plain Greek yogurt
- 2 tsp yellow curry powder
- 1/2 Tbsp lemon juice
- 1/2 tsp salt
- 1/2 cup shredded carrots
- 1/2 cup sliced celery
- 1/4 cup raisins
- 1/4 cup chopped cashews
Instructions:
